Pasta Pomodoro🍅
The summer is the best time to eat tomatoes as they are so ripe & sweet so this pasta should def be on your menu this time of year. It’s so simple & ready in 15 mins👩🏻🍳
What you need:
500g Cherry Tomatoes
500g Spaghetti
2 Garlic Cloves
1/2 Onion
Olive Oil
Burata (optional)
20g Parmesan Cheese
Basil
Salt & Pepper
What to do:
1. Fill the base of a large frying pan with olive oil, gently heat & add 2 cloves of peeled garlic & onion. Cook over a low heat for 3-4 mins until softened but not coloured.
2. Add cherry tomatoes & season well. Cook over low heat again for 10 mins until tomatoes have softened.
3. Cook pasta in plenty of salted boiling water until aldente, add 1 cup of pasta water(add more if needed) to the sauce, drain pasta & add to tomatoes.
4. Remove garlic from sauce, add Parmesan & basil, mix through.
5. Serve with burata, chili oil & black pepper.
