Ingredients: For the filling: 200g cabbage 1/2tsp salt 100g onion 10g ginger 3 cloves of garlic 20g chinese chives 10g dried shiitake For the dough: 200g all purpose flour 110g hot water (adjust the amount of water if needed) For the sauce: 2 tbsp soy sauce 1 tbsp vinegar 1 tsp toasted sesame oil 10g green onion 1 tbsp toasted sesame seeds 1 tsp chili bean paste (optional) 1 tsp sweet soybean paste (optional) Instructions: 1. sprinkle salt over cabbage and wait until water come out. 2. soak dried shiitake for 10 minutes or so. 3. mince all the vegetables for the filling and put together. 4. make the dough. divide the dough into small pieces.(13g each) 5. warp the filling. 6. boil the dumplings for 2 - 3 minutes.
